GARAM MASALA




2 tbsp cloves
1 tbsp green cardamom
2 cinnamon sticks
1/2 tbsp black cardamom
5 star anise
3 javithri / mace
1/2 tbsp pepper corns
1 all spice bark (opt)


Grind everything to fine powder and store in airtight containers and use when required.
You can increase the quantity of ingredients if you want to store more.








SAMBAR  POWDER


250 gms coriander pwd
120 gms chilli pwd
25 gms turmeric pwd
2 tsp fenugreek pwd


Grind together everything once again in the processor and store in airtight containers.
Whenever sambar is to be made, boil the vegetables alongwith the dal and when done add 1 tbsp of sambar pwd, salt, 1 tsp asafoetida and tamarind pulp and mix well and serve hot.
