INGREDIENTS:
- 2 chicken breast piece
- 2 onions thinly sliced
- Handful of curry leaves
- ½ tsp fennel powder
- ¼ tsp Turmeric pwd
- ½ tsp chilli pwd
- 1 tsp coriander pwd
- 2 tsp black pepper pwd
- ½ tsp garam masala ( refer to kerala masala)
- Salt as per taste
- 2 tbsp Coconut oil
- 1 tsp grated ginger
- 1 tsp finely sliced garlic
METHOD:
- Cut chicken pcs into small cubes, wash and drain off water.
- Marinate chicken pcs with turmeric, pepper powder, little salt and garam masala.
- In a wok pour oil and sauté the onions till light brown.
- Add the ginger and garlic and sauté till golden brown.
- Add rest of the ingredients and marinated chicken and keep stirring till the chicken starts to change colour.
- Add the curry leaves and salt as per taste after checking since we have already marinated the chicken pcs with salt.
- Cover with a lid and cook on low flame for 20 – 25 mins.
- Remove lid and fry the chicken pcs in the masala till slightly crispy on the outer and all the water is dried up.
- Serve piping hot with kerala parotta or chappathi.
